Easy and Healthy, Kid-Friendly Breakfast Recipe
Chorizo, mushroom, egg and cheese in beetroot wrap cups
Some of my Instagram followers have asked me to post kid-friendly recipes. I love cooking with my kids. As much as it can be a challenge sometimes to involve them, I find that showing them how to make something increases their interest in trying new things. !
We made this super simple beetroot wrap breakfast recipe over the weekend and we all loved it! We filled the wraps with chorizo, mushrooms, eggs and cheese but you could use any ingredients that will work well in an omelette and it will taste delicious! Rather than creating a usual breakfast wrap, I cut up the wraps and pushed them down into a muffin tray.
After just a few minutes in the oven, I had six impressive-looking and delicious tasting healthy breakfast option.
To make 4 portions:
Ingredients:
1 chorizo sausage, sliced
1 punnet mushrooms, sliced
1 cup grated Gouda cheese
8 large eggs
2 large PicknPay Beetroot Tortilla wraps
thyme
salt and pepper to taste
Preparation
Preheat the oven to 160 degrees
Cut the wraps in half, fold them into the muffin tray (don’t forget to use spray ‘n cook like I did!)
Fry the chorizo and mushrooms and then spoon into the muffin tray
Add two eggs per unit
Top with grated cheese, thyme, salt and pepper
Put the muffin tray in the oven and bake on 160 degrees for 12 minutes.
Check if the eggs are cooked through, otherwise leave in the oven for a few more minutes.
