Gammon Sausage Bake with Apples, Tomatoes and Coriander

Great Recipes to make with the Pick n Pay Festive Gammon Sausages

It’s that time of year when limited edition products fill the shelves. Pick n Pay stock these Festive Gammon Sausages only at this time of year, and you’d be silly to miss out! This recipe is a nice Christmas addition that you can’t go wrong with. It only take about an hour to make. For a quicker recipe, check Zola’s Honey Mustard Glazed Gammon Sausage recipe, which is prepared in the air fryer.

Ingredients

  • 1 packet Pick n Pay Gammon Sausages

  • ⁠4 Granny Smith Apples 

  • ⁠250g Mini Plum Tomatoes 

  • 150g PnP Pomegranate Pearls 

  • 20g fresh Coriander 

  • ⁠1 cup Chicken Stock 

  • 1 Tinfoil Braai Pan 

  • Tin foil

How to make the Gammon Sausage Bake

  1. Preheat the oven or kettle braai to 180 degrees Celsius (360 degrees Fahrenheit). 

  2. Core the apples and cut them in quarters. There is no need to peel the apples, you can leave the skin on for this recipe.

  3. Add the gammon sausages, apple quarters and mini plum tomatoes to the tin foil braai pan. 

  4. Pour one cup of chicken stock over. 

  5. Cover the tin foil braai pan with some tin foil and bake covered for 25 minutes in a kettle braai (I used the Everdure by Heston Blumenthal 4K) or oven at 180 degrees (360 degrees Fahrenheit). 

  6. Remove the tinfoil from the braai pan and continue to bake  your dish until the sausages are golden brown. 

  7. Top your dish with fresh coriander and pomegranate pearls before serving.

You can use this recipe to make variants of the same dish. For example you could leave out the chicken stock and mini plum tomatoes, and drizzle over some honey and balsamic as well as a can of pineapple rings.

Another recipe with Pick n Pay Festive Gammon Sausages

MasterChef judge Zola Nene recently shared this recipe for easy Honey Mustard Glazed Gammon Sausages done in the air fryer.

Ingredients for Honey Mustard Glazed Gammon Sausages

  • 2 packets Pick n Pay Gammon Sausages

  • 80 ml honey

  • 1-2 tbsp wholegrain mustard

  • Salt and freshly ground pepper to taste

  • A few thyme leaves as garnish

  • A handful of cherries

  • Mayonnaise, hot mustard or a sweet chilli sauce (for dipping)

  1. Slightly warm the honey so that it becomes runny.

  2. Mix the honey with the mustard and salt and freshly ground pepper.

  3. Air fry the sausages at 180 degrees Celsius (360 degrees Fahrenheit) for twenty minutes

  4. At the halfway mark, start basting the sausages every 2 to three minutes with the honey/mustard glaze.

  5. Serve your dish with some thyme and cherries, as well as dip of your choice.

Leaving his 7-month-pregnant wife to look after their then three and one-year-old children, he battles it out and comes back home five weeks later with the trophy and a million rand prize money in his pocket.

It all started with an Instagram account, but The Roasted Dad is so much more now. Shawn has stayed his entrepreneurial self and whilst he hosts Private Dinner Parties and Cook-with-Me Demos, does Restaurant Take-Overs, he still runs the lighting company and several other businesses.

On his blog, Shawn shares Restaurant Reviews and Accommodation Reviews, and gives an insight into the wild and wonderful life he leads together with his wife Lianne, and their three children Aiden (6), Olivia (4) and Harvey (2).
