Parmesan and Dukkah Angelfish with Sumac and Labneh Potatoes

Delicious fish recipe using the Kiln pizza oven.

I recently made this dish live on the Expresso Morning Show (‘you’re feel-good breakfast show’), which was a lot more difficult than cooking in the comfort of my home, let me tell you! I hope I showed the viewers that you can use a pizza oven for more than just pizza though.

Ingredients to make Parmesan and Dukkah Angelfish with Sumac and Labneh Potatoes

  • 75g Breadcrumbs

  • 1 Lemon (zested and squeezed)

  • 75g Grated parmesan

  • 4 Tbsp chopped Coriander

  • Salt and Pepper

  • 4 Skinless Fillets of Firm Angel Fish or another White Fish

  • 50ml Wok Oil

  • 700g Baby Roasting Potatoes

  • 6 Tbsp Olive Ofil

  • 1 Tbsp Sumac

  • 3 Cloves crushed garlic

  • 50g Melted butter

  • 1 Cup Labneh (as an alternative, you could use warmed double thick Greek yoghurt)

  • 10g Mint leaves

How to Prepare the Parmesan and Dukkah Angelfish

  1. Mix the breadcrumbs with the grated lemon zest, grated parmesan, chopped coriander, salt and pepper.

  2. Place the cast iron pan in the pizza oven for 15 minutes until hot.

  3. Place the crust mixture onto the fish.

  4. Add wok oil to the heated cast iron dish, add the fish and then return to the Kiln oven for 3-5 minutes.

How to Prepare the Sumac and Labneh Potatoes

  1. Parboil the baby potatoes for 8-10 minutes in salted boiling water.

  2. Cut the potatoes in half, generously grind pepper and salt and drizzle with olive oil.

  3. Place the cast iron pan into the Kiln for 15 minutes.

  4. Drop the top burner to low.

  5. Add the potatoes with olive oil and roast for 10 minutes.

Leaving his 7-month-pregnant wife to look after their then three and one-year-old children, he battles it out and comes back home five weeks later with the trophy and a million rand prize money in his pocket.

It all started with an Instagram account, but The Roasted Dad is so much more now. Shawn has stayed his entrepreneurial self and whilst he hosts Private Dinner Parties and Cook-with-Me Demos, does Restaurant Take-Overs, he still runs the lighting company and several other businesses.

On his blog, Shawn shares Restaurant Reviews and Accommodation Reviews, and gives an insight into the wild and wonderful life he leads together with his wife Lianne, and their three children Aiden (6), Olivia (4) and Harvey (2).
