Spicy Chicken Wings served on a peach, avo, mint and basil salsa
Braaied and marinaded in a potjie for the best flavours
I’ve been working with Juicy Delicious to create several recipes with stone fruit. Like most of my fellow South Africans, I don’t need an excuse to cook outdoors on the fire. Whether on a braai or in a potjie, this is where the best meals are made.
For this spicy chicken wing recipe, I chose to braai the wings and marinade them in a potjie pot. This was a winning method - by doing so you get both the smokey flavours and tender fall-off-the bone hot wings.
By adding a sweet salsa, the spice is balanced nicely. I really enjoyed this combination and love the colourful look too. You eat with your eyes first, after all.

Ingredients to make spicy chicken wings
1 kg chicken wings
1 cup mango atchar (if you like your wings really hot get Hot Atchar)
1 cup mayonaise
50ml sriracha
Ingredients to make the salsa:
6 ripe peaches
2 ripe avocados
1 red onion
20g fresh Basil
20g fresh Mint
How to make the chicken wings
Marinade the chicken in the atchar for at least 6 hours, preferably overnight, in a sealed container.
Prepare a medium to hot fire and then braai your chicken. Set aside the atchar, you will still need this later.
Mix the atchar, mayonaise and sriracha sauce and place into your potjie pot. Once the chicken is nicely browned (grill lines / charring adds to the flavour) then add it to the potjie pot.
Keep the coals on low and slow and cook for 20-30 minutes or until tender and close to falling off the bone.
How to make the salsa
1. Dice the peaches and avocado into roughly 1cm cubes.
2. De-stalk the herbs and then fine chop.
3. Finely dice the onion.
4. Season with salt and black pepper and then mix gently.
Assemble your dish by placing a good 4-5 table spoons of salsa and the 4-5 wings on top.

Leaving his 7-month-pregnant wife to look after their then three and one-year-old children, he battles it out and comes back home five weeks later with the trophy and a million rand prize money in his pocket.
It all started with an Instagram account, but The Roasted Dad is so much more now. Shawn has stayed his entrepreneurial self and whilst he hosts Private Dinner Parties and Cook-with-Me Demos, does Restaurant Take-Overs, he still runs the lighting company and several other businesses.
