Lamb Lollipops on Flatbread with a Mayo Pesto, Mozzarella and a Grilled Halloumi Skewer

What are Lamb Lollipops?

Lamb Lollipops are basically deboned lamb chops, rolled on a skewer. You can either buy them ready-made, or buy deboned lamb ribs and roll your own and push a skewer through.

Ingredients

How to make the Flatbreads

  1. Mix together the Eureka Mills Pizza Home Mix and Yeast sachet (included in the Easy Home Mix).

  2. For the best consistency, first add half of the water, mix, and then add rest of water and mix thoroughly.

  3. Add the oil and mix. Do not knead the dough.

  4. Place the dough in a mixing bowl, cover with a dish cloth and let the dough rise for 30 minutes.

  5. Separate the dough into eight equal-sized (200 gram) balls and roll each ball our with a rolling pin, to the desired thickness into a flat bread shape.

  6. Prick each base with a fork several times. Let the flatbreads rise a second time

  7. Grill on the skottel braai or bake in the even at 250°C for 10-15 minutes (depending on base thickness).

The Roasted Dad Tip: If you have cooked bases without toppings) left over, place in an airtight bag and freeze for up to 3 months.

How to make the Lamb Lollipops and Halloumi Skewers

If you are making the lamb pinwheels or lamb lollipops yourself:

  1. Slice the deboned lamb rib into strips and marinate them in rosemary and olive oil with salt and pepper. Once marinated, roll the strips and push a skewer through.

  2. Braai or grill the lamb lollipops or pinwheels until done to your liking (I recommend to medium-rare).
    I used my Instant Vortex Plus Air Fryer for this recipe on 195 C for 20 minutes.

  3. Push a skewer through the halloumi cheese as well and braai or grill these too.

Assembling the Dish

  1. Mix six table spoons of pesto and with six tablespoons of mayonnaise to make the sauce.

  2. Assemble your bread with the pesto/mayo sauce, lamb lollipops, halloumi skewers, artichokes, mozzarella and mint leaves as shown on the video below.

  3. For a finishing touch, use a blow torch to melt the mozzarella.

Leaving his 7-month-pregnant wife to look after their then three and one-year-old children, he battles it out and comes back home five weeks later with the trophy and a million rand prize money in his pocket.

It all started with an Instagram account, but The Roasted Dad is so much more now. Shawn has stayed his entrepreneurial self and whilst he hosts Private Dinner Parties and Cook-with-Me Demos, does Restaurant Take-Overs, he still runs the lighting company and several other businesses.

On his blog, Shawn shares Restaurant Reviews and Accommodation Reviews, and gives an insight into the wild and wonderful life he leads together with his wife Lianne, and their three children Aiden (6), Olivia (4) and Harvey (2).
