Loaded Fries with Bobotie mince - Pick n Pay ASAP Live

A recipe for when those carbo-cravings hit

For the Pick n Pay ASAP Live! event I created two recipes. These loaded fries with bobotie mince are a delicious snack to share, or can be eaten as a meal. It’s not a healthy recipe, but when those cravings hit, it will hit the spot. You can find my creamy chicken, mushroom and biltong pasta here.

Ingredients to make loaded Fries with bobotie mince

  • 500g mince

  • 2 onions 

  • 1/2C of raisons

  • 1kg No Name straight cut frying potato chips 

  • 2lt PnP sunflower oil

  • ½C PnP original mayonnaise

  • 250g mozzarella

  • 250g mature cheddar

  • 3 tbsp Cape Herb and Spice Cape Malay Curry Spice

How to prepare loaded Fries with bobotie mince

  1. Fry the onions, then add 2 tbsp spices and fry until the spices release.

  2. Add the mince and cook until done.

  3. Fry the chips in the sunflower oil in a deep fryer or deep pan until done.

  4. Meanwhile, grate the cheese.

  5. To make the sauce, mix 1 tbsp of Cape Malay curry spice into 1 cup of mayonnaise.

  6. Add the fries to an oven-proof dish, top with the cooked mince, dollops of the spiced mayonnaise and lastly the grated cheese. 

    Place the dish under the grill for 2 minutes until melted.

Fast-forward to late 2021 - on a whim Shawn (encouraged by his wife Lianne) enters MasterChef South Africa. It is a crazy time of life: running a 200 people business and struggling to keep it profitable, two small children with a third on the way, and about to move into a new house. But when Shawn gets selected to be one of the 20 contestants participating in the fourth season of MasterChef South Africa, he decides to go all in. Leaving his 7-month-pregnant wife to look after their then three and one-year-old children, he battles it out and comes back home five weeks later with the trophy and a million rand prize money in his pocket.

It all started with an Instagram account, but The Roasted Dad is so much more now. Shawn has stayed his entrepreneurial self and whilst he hosts Private Dinner Parties and Cook-with-Me Demos, does Restaurant Take-Overs, he still runs the lighting company and several other businesses.

On his blog, Shawn shares Restaurant Reviews and Accommodation Reviews, and gives an insight into the wild and wonderful life he leads together with his wife Lianne, and their three children Aiden (7), Olivia (5) and Harvey (3).
