Pink Lady Apple Donut Flapjacks
Flapjacks for Breakfast? Yes please!
We often take some time on the weekend to make a nice breakfast together with the kids. I’ve previously shared my fluffiest flapjacks recipe, but this is something totally different! By dipping apple slices in the batter, you can include some fruit in your child’s diet. You can opt to cut the apple slices thinner, or poach the apple beforehand if you want it to be soft. I cut thick slices and didn’t poach them as we like the crunchy texture of the apple inside the flapjacks, but this is up to you!
Ingredients to make Pink Lady Apple Donut Flapjacks
This recipe makes enough for a family of four.
1 Cup Self Raising Flour
1 Cup Milk
1 Egg
1 Tsp Vanilla Essence
1 Tsp (or more - to taste) Cinnamon
4 Large Pink Lady Apples
80 gram Pick n Pay Fruit Roll
1/2 cup of Water
Some icing sugar for sprinkling (to taste)
How to Prepare Pink Lady Apple Donut Flapjacks
Whisk the egg and milk together.
Sieve the flour and add bit-by-bit to the egg/milk mixture, whisking gently. Careful not to overmix.
Add the vanilla essence and cinnamon to the mixture.
Cut the apples in slices and core the slices to get the seeds out.
Cut thick slices if you’d like the apple to still be crispy, or thinner slices if you’d like the apple to be soft. You can also opt to poach the apple beforehand. I cut thick slices and didn’t poach them as we like the crunchy texture of the apple inside the flapjacks.
Dip the apple slices in the batter and fry them in a pan with a little oil. Turn once golden on one side.
Whilst your apple donut flapjacks are frying, you can cook down the fruit roll (cut down in strips) in a sauce pan with some water until it forms into a thick paste.
Once the apple donut flapjacks are fried golden on both sides, present them on a platter with a generous serving of dollops of cooked down fruit roll and a sprinkle of icing sugar.
Serve and enjoy immediately - enjoy!
