Vegetarian Samp, Bean and Creamed Butternut Potjie with Grilled Halloumi

Ingredients to make Samp, Bean and Creamed Butternut Potjie
2 x 500g No Name Live Well Samp and Beans
1kg Let’s Cook Butternut
500g PnP Carrots
100g PnP Let’s Cook Garlic & Herb
10g PnP Fresh Basil
4 x 28g Knorr Chicken Stock
2 whole red onions
200g halloumi cheese
2 lemons
How to Prepare Samp, Bean and Creamed Butternut Potjie
Cover the samp and beans with water and leave to soak overnight.
Slice and fry the onions until golden brown.
Peel and slice the carrots.
Add the soaked samp and beans, butternut, carrots, garlic, chicken stock, onions in a pan.
Cook over the coals or on the stove on a simmering heat for 2.5 hours or until the samp and beans is soft and the butternut is creamy.
Fry the halloumi in a pan or on the braai and then slice into soldiers.
Serve your dish in a bowl or mini potjie pot with halloumi on the side and some basil leaves for garnish, squeezing some lemon juice over the dish before serving.!

Leaving his 7-month-pregnant wife to look after their then three and one-year-old children, he battles it out and comes back home five weeks later with the trophy and a million rand prize money in his pocket.
It all started with an Instagram account, but The Roasted Dad is so much more now. Shawn has stayed his entrepreneurial self and whilst he hosts Private Dinner Parties and Cook-with-Me Demos, does Restaurant Take-Overs, he still runs the lighting company and several other businesses.
